Vegan Coconut Banana Waffles

This is the only vegan waffle recipe you will ever need. Traditional einkorn flour, metabolism boosting coconut oil, fresh organic bananas- this recipe has it all. These waffles are delightfully crispy on the outside and soft and fluffy on the inside. I’m telling you… this is the ONLY vegan waffle recipe you will ever need.


Vegan Coconut Banana Waffles
1 banana, mashed
2 cups einkorn flour
1 3/4 cups coconut milk
1/2 cup Perfect Coconut Oil
2 tbsp. coconut sugar
1/2 tsp. baking soda
1/2 tsp. sea salt
1/2 cup vegan chocolate sauce

Directions: Preheat waffle iron according to directions. Combine flour, sugar, salt, and baking soda in a large mixing bowl. Add coconut milk and coconut oil to a separate mixing bowl and stir to incorporate. You may need to warm the coconut oil if your kitchen is cooler than 75 degrees. Combine wet ingredients with dry ingredients and begin mixing with a sturdy whisk. When the batter is slightly smooth, whisk in the mashed banana. Mix until mostly smooth. Grease iron with coconut oil. For this recipe, 1/c cup of batter makes a perfect sized and textured waffle. Cook waffle for about 5 minutes, or until golden brown. This recipe makes 5-6 large waffles. To boost the protein content of this breakfast, try adding a scoop of Perfect Plant Protein to the batter.
