Fall Harvest Pulled Pork Grilled Cheese

MMM, what’s better than the flavors and colors of fall produce? Crisp red Apples, bright orange pumpkins, rainbow squash, spicy red peppers, purple onions and sweet potatoes… Can you tell that I LOVE fall produce? The only thing better than the flavors of fall is bacon so obviously I had to figure out a way to combine my favorite fall produce with plenty of pastured pork. As a follower of the Weston A. Price diet, I also LOVE cheese and butter, so the solution was simple: the Fall Harvest Pulled Pork Grilled Cheese.

Fall Harvest Pulled Pork Grilled Cheese inblogvertical
1 Cortland apple (other sweet varieties will work)
1 purple onion
1 cup BBQ pastured pulled pork
1 cup shredded grass-fed mozzarella cheese
4-6 strips of pastured bacon
4 pieces of sprouted grain bread
grass-fed butter, as needed

Directions: This recipe makes two normal grilled cheese sandwiches or one double-decker sandwich. Preheat the oven to 375. Slice the apple into thin circles and slice the onion into thin rings. Place the apples and onions on a baking tray and bake for 5 minutes, flip, and bake for 5 more minutes. While the oven is preheating and the vegetables are “grilling,” cook the bacon until crispy. Mix pulled pork (I used homemade but I didn’t write the recipe down- Sorry!) with mozzarella cheese and spoon onto two pieces of bread. Top with a couple of slices of apple and a few onion rings and then finish the sandwiches with the remaining pieces of bread. Spread butter liberally on each side of both sandwiches. Places the sandwiches on the baking tray and press each sandwich with a spatula. Bake for ten minutes, flip and press with the spatula, and then bake for 5-10 more minutes. Enjoy!
