After I complete a workout, I’m usually reaching for the quickest and least healthy thing I can think of. Filling your body with processed sugars and unhealthy fats (like those found in store bought ice cream) is the opposite of productive. To avoid falling into unhealthy cravings after a workout it is important to keep pre-made snacks that are packed with protein readily available. This homemade ice cream is 100% dairy-free and contains 5 grams of protein per serving!
Post-Workout Ice Cream
3 cups full fat coconut milk
½ cup raw organic sugar
1 scoop Perfect Plant Protein
1 tsp vanilla extract
1 tsp of cinnamon
Directions: In a large saucepan, combine coconut milk and sugar over medium heat. Stir thoroughly and bring mixture to a boil. Continue stirring for 1-2 minutes. Remove from heat. Pour ice cream mixture into a large bowl and add protein, cinnamon, and vanilla extract. Stir well and refrigerate until cool. Transfer mixture to a deep baking pan and freeze for 45 minutes. Remove from freezer and stir thoroughly, breaking up any crystallized ice. Return to freezer. Continue freezing, stirring every 30 minutes, until mixture is smooth and frozen. Scoop and enjoy or freeze in an airtight container for up to 1 week. (3 Servings)
