Quinoa, Kale, and Sweet Potato Burgers

These veggie burgers are the perfect pre-workout meal! Kale is packed with B vitamins that work to create energy at the cellular level. Sweet potatoes and quinoa serve as healthy slow digesting carbohydrates that provide long lasting energy throughout your workout. BONUS POINTS- these delicious patties are vegan and gluten-free!

Quinoa, Kale, and Sweet Potato Burgers
1 onion, finely chopped
1 cup kale, de-stemmed and finely chopped
1 cup sweet potatoes, cooked and mashed
1 cup quinoa, cooked
1 cup summer squash bisque*
1/2 cup gluten free bread crumbs**
1/2 cup gluten-free all purpose flour
1/2 cup Perfect Coconut Oil

Directions: In a large mixing bowl, combine all ingredients except coconut oil. Mix ingredients thoroughly with a large spoon (or clean hands). If needed, add water until the dough sticks together enough to form patties. Heat coconut oil in a skillet over medium-high heat. Fry patties, flipping once, until golden brown- about 3 minutes on each side. This recipe makes 4-6 deliciously healthy patties. Enjoy!

Chef’s Notes:

*This was the vegan liquid I had on hand. Barbecue sauce, ketchup, or salad dressing can be used as a substitute.
**Any GF bread crumbs will work. I used homemade barbecue flavored bread crumbs made from old gluten free bread.
***I topped these patties with local blue cheese. Omit or use vegan cheese if avoiding dairy.
