Superfood Spaghetti

Want a pasta dish that you can feel good about? How about pasta dish that makes you feel super!? Our ‘Superfood Spaghetti’ contains 9 superfoods and is packed with vegetarian protein from a healthy serving of gluten-free quinoa spaghetti. It is also a perfect serving of healthy fats thanks to omega-3 rich avocado, coconut oil, and walnuts.  The added boost? This Superfood Spaghetti contains raw, organic, fermented oat grass, wheat grass, and barley grass. This recipe is also vegetarian, gluten-free, dairy-free, soy-free, and grain-free.

Superfood Spaghetti
1 box quinoa spaghetti
1 avocado, diced*
1 cup full fat coconut milk
1 bulb fresh garlic, peeled
½ cup raw walnuts, chopped
¼ cup Perfect Coconut Oil
1 scoop Perfect 3 Grass Blend
sea salt, to taste
cracked black pepper, to taste

*It is very important to use a ripe avocado. If the avocado has not softened, the sauce will not be the right consistency.

Directions: Add quinoa pasta to boiling water and cook for 6-9 minutes. While pasta is cooking, add coconut milk, avocado, garlic, Perfect Coconut Oil, Perfect 3 Grass Blend, and spices to a high speed blender. Blend on high until rich and creamy. If the sauce is too thick for your liking, add water until you reach a desired consistency. When the pasta is finished cooking, drain the water and toss the pasta with the sauce. The heat of the pasta will warm the sauce. Stir half of the chopped walnuts into the pasta and use the sprinkle the other half as garnish when serving. Recipe creates 4 large servings.
