Other people have trouble digesting it. Some health gurus will tell you to steer clear simply due to fat and calorie content… Luckily for me, I am not allergic, I digest nuts pretty easily, I don’t fear fat, and I definitely don’t count calories!
This recipe may not be Paleo or even Weston A. Price approved, but it is vegan, gluten-free, requires only three ingredients and basically zero effort! So if you are a peanut butter lover like me, I’d like to introduce you to my little friend…
These freezer fudge candies are made with White Chocolate Wonderful Peanut Butter from Peanut Butter & Co. If you aren’t familiar, Peanut Butter & Co is a NY based company that produces artisan peanut butters that are non-GMO project verified and absolutely delicious!
Not only are these treats packed with delicious peanut butter, they are also made with metabolism boosting coconut oil to create a treat that is rich and nutrient dense. You will only need one (ok, maybe two) before your peanut butter craving is totally satisfied!
White Chocolate Wonderful Cups
1/2 cup White Chocolate Wonderful
1/4 cup Perfect Coconut Oil
1/4 cup maple syrup or raw honey
Directions: Fill a baking tray with 9 muffin liners. Melt the coconut oil over medium low heat. When the coconut oil has melted, whisk in the peanut butter and maple syrup or raw honey. Remove from heat and pour mixture into the muffin liners as evenly as possible. Place the tray in the freezer for 20-30 minutes to harden and then enjoy! The leftovers can be stored in an airtight container in the refrigerator or on the counter so long as your home doesn’t reach over 75 degrees.
