Strawberry Recipe Roundup: Gluten Free (Paleo) Shortcake & Vegan Crisp

It’s that time of year again … strawberry picking season! Woo Hoo! Here’s a quick list of links to my favorite strawberry recipes. I include substitution information to make recipes Paleo or Vegan. I hope you enjoy them as much as I do!

Shortcakes – Gluten Free with Almond Flour, and Paleo / Vegan Options

I love cooking with almond flour and prefer the taste to white flour. As an added bonus, almonds are considered a superfood, loaded with vitamins and minerals. Almond flour is also a great option if you are trying to increase protein and reduce carbs in your diet.

My three children and my in-laws (white flour lovers) all loved this recipe.

Strawberry Rhubarb Crisp – Gluten Free with Paleo / Vegan Options

Fruit Crisps are my favorite dessert recipe to bake. They taste great with whatever fruit is in season. Much easier than pie crusts (for me), and I prefer the crispy texture. Mmmmm, so yummy … I’m making one of these this week!

Strawberries and Cream Smoothie Recipe

What to do with those leftover fresh or frozen strawberries? Smoothies, of course! My children and I love smoothies. They are a simple way to add healthy fruit, vegetables, super foods and protein to your family’s diet. Check out our blog for tons of smoothie recipes.

Add to your blender …5 Favorite Strawberry Recipes (1)

1 Cup – Strawberries

1/2 Cup – Milk of Choice – coconut, almond, or cream if you can tolerate dairy, etc.

Throw in several ice cubes if you want a frozen texture.

Add filtered water up to the 2 1/2 C mark on your blender.

Add protein powder of your choice (optional) – I am currently using Great Lakes Collagen Hydrolysate – it is tasteless and doesn’t gel like gelatin – or try Perfect Plant Protein for a Vegan option.

Add a teaspoon of natural sweetener (optional – to taste) – honey, maple syrup, etc.

Add 1/2 scoop of Perfect Super Foods (optional) – such as Perfect Kale, Fermented Grass Blend, or Aquatic Greens.

Blend it up and enjoy!
