Chocolate Coconut Truffles

These deliciously decadent Chocolate Coconut Truffles are 100% vegan and gluten free. Better yet, this recipe is no-bake, takes only 15 minutes to prep and provides countless vital nutrients. The coconut meat and oil contains important long chain fatty acids while the raw cacao provides powerful antioxidants as well as many important vitamins and minerals.

Chocolate Coconut Truffles
1 cup shredded coconut
2 Tbsp Perfect Coconut Oil 
3 Tbsp raw honey or maple syrup
1/2 tsp vanilla extract
sea salt, optional 
vegan chocolate topping, as needed 

Directions: Heat coconut oil until melted and then combine with raw honey and vanilla extract. Stir in the shredded coconut until combined. Form 1 inch balls and place on tray lined with wax paper. Sprinkle with sea salt. Place in freezer for 30 minutes, or until hardened. Remove truffles from freezer and drizzle with chocolate sauce. Freeze for another 30 minutes or refrigerate for at least one hour and then enjoy!
